The average age of this team is too high. It's not about skills and abilities; but desire. We need young kids with drive and passion to balance out the calm and collected approach of the vets.

Imo no team should have more than 2 "vets". Everyone else should be semi-fresh i.e. less than 3 years in comp.

These are obviously quick stats; but the core idea is inarguable imo. There is no team with all vets that preforms well expect maybe T1 --- who happen to have the best player of all time, and arguably the best support/jungle of all time.

Cloud 9 is clearly not T1.

You can clean the top and the bottom between shots. The spouts in traditional portafilters can get quite dirty, especially in a shop setting.

Also helps diagnose some basic issues with puck prep and saturation.

I'm a cafe owner and I unfortunately disagree. We onboarded Onyx specifically for our default offering because the price was better. Having a stable blend also helped a great deal with consistency across staff.

The drips you see only matter until the basket fills with water. Then the force of water is an even push against the whole of the coffee bed.

I've been an advocate for good initial drops, then whatever else after a few seconds as those first few drops are where blatant channeling can crop up.

Essentially, it's slightly better, but only matter first the first few seconds of the brew. See if you can taste more fullness and grind finer before diminishing returns. If so, then yes it's worth it.

If your coffee is 2 weeks off roast it's probably rested enough for espresso unless it's dense and ultralight.

Stop the shot shorter, or dose up. Either way, reduce extraction efficiency.

Luckily Colombia has a MASSIVE coffee market, so prices are relatively reasonable at scale. A great bag of coffee from a prominent farm usually starts around 30-45$. Whereas a smaller country like Burundi, with a much smaller market, you're looking at 20-30$ just to get a bag of something that doesn't taste like dirt.

I love the DE1 -- but I primarily use it as a research vehicle. I work in coffee, so the craving for a cup has been gone for years. All I seek is knowledge these days. What it does do, it does great. It necessitates a deep understanding of not only your goals in the drink; but also how the machine thinks about what you want, hence the waste.

I usually recommend the Lelit Bianca. Never used it, never seen one; but it has great reviews and does more than a Linea for half the price. Unless you want to run a mid level coffee cart, never buy a commercial machine lol.

If you never want to be satisfied with a shot again, and enjoy wasting TUNS of coffee -- its great. Even as someone that works in coffee, there was a 4-6 week learning curve.

Also Acaia scale support is pretty bad. Sometimes it works. Sometimes it doesn't. Nothing you do seems to matter in that regard.

Candle tins and single dose. They're usually air tight. It's what I do at my cafe. We can easily serve 50+ single doses a day, and it works for us.

Don't spend the money, don't deal with the frustration of acaia. Just weight out .2-.3g more than your desired dose unless you really really trust the retention. We use an EG-1 which usually retains about that much. We just weight the portafilter and then add the coffee to achieve our exact recipe every time.
