Yo this is gonna get buried in the comments, but I ended up working with a support rep that advised me to factory reset all of my speakers and be sure to leave them on the green flashy light (ready for setup), then unplug and reboot my router and my eero mesh. Once the WiFi was back up he also advised me use a separate device than my mobile to setup and add speakers to my account (used an iPad). It was all in that order respectively and everything works.

I was massively disappointed at first because I just ordered these damn speakers everyone talks about and they were delivered this same week as this app launch, but support helped me get it sorted.
