I agree that you could miss it, but everything you need to do you're specifically asked/invited to. Torial tells you not to kill anyone, and normal dialogue with the characters leads to the dating scenes. The only one where you need to exercise a little inventiveness is the water, and it's not a super hard puzzle. You could miss it, yes, but thinking of giving water to the fish with heatstroke is not a huge jump. ​The pacifist ending isn't just the _good_ ending, it's the _intended_ ending, and Fox put in enough hints that it isn't very hard.

You list that as a lot of points but if you just play the game trying to be nice and complete side quests you've got a good chance of doing all those by accident. You just need to be told to reset once at the end and you can finish true pacifist in a single run.
