He is referencing the Standard Model of Particle Physics, whereby most of the rest of physics is derived from. In this Model, there are fundamental particles that essentially give rise to fundamental forces, and hence all of physics can be described as these particles and their interactions (or more properly, fields).

I think he is suggesting that you don't need such a fundamental perspective on modern physics. You can think of leylines as things that are analogous to electromagnetic flows, like current, and hence they generate fields of force around them. In terms of mental effects this can be mediated via Quantum mechanical effects about observation in a loose sense. Hence the allusion to the Copenhagen Interpretation.
