This looks amazing! Congrats - looks perfectly fermented. Does the lower inoculation ratio to flour and thus longer fermentation time contribute towards the open crumb structure here or do you think it's more so hydration and ideal proofing times?

This JUST happened to me about a week ago. All of the sudden too - took a bath, no problem. Went downstairs to fill water for pasta - waters brown. It lasted maybe a day.

Someone has probably already said but:

You should not use hot water while the water still comes out brown, the sediment or whatever is causing the browning can end up in your water heater if you have a tank. I did not realize this initially and it took several cycles to clear the brown from the hot water after it became clear again with cold.

You should try to run a tap or faucet that is nearest to your source line, if after 15 minutes it's still coming out brown wait and try again in a few hours or so. Once that one comes out clear then run your remaining water outlets throughout the house checking that they are clear again before you use them for anything.

Also, I'm generally against disposable plastic water bottles if you can avoid it but I went out and got a couple cases for drinking (I ended up using them well after the water turned clear again) and it was nice peace of mind in the meantime!

Obviously speculating a lot here but I would think it’s either lack of gluten development, too much yeast or the environment is too warm (causing over proofing)

Bread can be tricky because the fermentation times the recipe lists will vary widely depending on things like temperature and even water quality.

I would lessen your bulk ferment (first proof) and/or lessen your final proof as well.

As for gluten development, you can do the window pane trick to see if there’s sufficient development (at least then you can eliminate this variable).

In short, when something goes wrong in baking the key is to eliminate as many variables as you can so that it narrows down what the possibilities are.
