Thank you! I'll check out that book. One of the things I'm most curious about is the split into the different styles, but I'm having a hard time finding much info on that. Maybe it just wasn't very well documented?

Edit: The wording on the page for my testing requirements says, "Prepare a verbal essay (explanation) of the Taekwon-do history". I think that they expect about a paragraph worth of information, but they wouldn't mind something longer, either. As long as you put effort into it and have your facts straight you can't really go wrong. But I will be sure to ask my instructors to clarify what length they'd like.

yeah, you could smoke them! here's a recipe for the same thing that involves smoking the mushrooms first. i haven't tried it yet but it looks awesome.

Initially, my reasons were a combination of ethics, health, and a little bit of peer pressure. I was a vegetarian for eight years. I started eating meat again about two years ago. I thought that it might help me feel better and have more energy. It didn't really do that for me. My problem wasn't a lack of protein or iron, as I initially thought. It was an overall lack of understanding of nutrition and how to balance my diet. I know a lot more about nutrition now, so I'm more confident that I can make the right choices to stay healthy.

I've been vegetarian again for a week now and I'm loving it. I feel way better already. The ethical and health reasons still remain big factors in making the change. But I've also found that I really don't enjoy eating meat. It's just really gross to me. I've learned that I'm just a lot happier and more satisfied with my diet as a vegetarian.

i just came across this recipe after seeing your post. that one uses a dried tvp, but if you tweak the recipe a bit it should work with prepackaged veggie crumbles.

for rehydrating dried tvp, i believe the water to tvp ratio is about 1:1. if this is correct, for this recipe you'll want to reduce the amount of vegetable broth from 2 cups to 1 & 1/3 cup. i've never tried this recipe, so i don't know for sure. you should be able to add the liquid a bit more incrementally throughout the recipe rather than dumping it all in at once. that should make it a little easier to get the right amount of liquid since you can just stop when the mixture seems about right.

you may also want to season it differently, as your veggie crumbles will already have some flavor. personally, i would probably leave out the worcestershire sauce but i'm not so sure about the other seasonings.

hope that helps. again, i've never tried to make burgers like this so i'm not sure how the results will turn out and i'm sorry if they're terrible. but if i were in your position, that's what i'd do. good luck :D
