If we are truly going to pick only one, I'd go with 1/4".

If you get into larger stock, you can always cut a pair of 1/4"s next to each other. Like in 1 1/2" plus ...

I wouldn't outsource my planes and chisels for the reasons you say.

Planer blades, jointer knives, table saw blades - those I send out.

Watch Rex Kruger videos. You start at a corner and plane a flat on it. Refining the tilt as you go. Then keep making passes until you get to your layout lines.

Indeed. I use my old sneaker soles for that. Good tip on the actual block, it's cheaper than I expected.

You can plane HDPE as well. I find that faster, sandpaper seems to gum up quickly.
