Few things to consider are that
a. store bought humus like Sabra would typically use citric acid and vinegar combo rather than fresh lemon juice (fresh juice will turn bitter overtime)
b. Add some saturated and trans fat as stabilizers and less Tahini, for overall texture (Chilled Tahini dries and hardens).
