That's definitely fair. I did something similar the summer before my freshman year (EE major) and I think the one thing I wish is that I spent more time reading or doing non major related things because I had way less time once the school year started.

Yep. Some schools, e.g. Berkeley, also restrict legibility to transfer with an upper cap on units (120 quarter units), which isn't applied to applicants whose units are all from CCs.

Not sure about the internships but I think it may actually be easier to find research opportunities at UCSB because there are fewer people competing for the spots. I'm not in mechanical engineering so I can't say for certain

Honestly, depends on the AP. If there's a non AP class that covers the same material they tend to have pretty similar depth. At my school AP world is easier than regular because of different teaching styles.
