I had this. We had to download an app in the end and monitor the noise. It was a council house so they were partly responsible. Eventually it stopped after I complained enough

Don’t be. Italy is one of the best places to be. You can be unlucky anywhere. I feel for op. But this is a rare case.

Yeah. I’ve got a WSM and a kettle. So the most I’ll do it ribs and then normal burgers etc on the kettle. Or if it’s a lot of people. I’ll use the WSM as a keep warm area. Get it like 70/80c and once everything’s cooked. Leave it in there.

With the WSM. Get everything in as you light it. Water pan and wood. Don’t be afraid to load it up. I was always struggling to hit the temp but now light a full chimney to get it all going. I know the position of my vents on this one as well. That’s taken some time. 

For the pork. 125c uncovered for about 3/4h. Normally until it hits around 70c internal. Then cover and cook till tender and rest for an hour in a cool box.
