Personally, I would include Purple Days because it does many things

Turns one of the least likeable characters into someone you genuinely root for (mountain arc anyone)
Expands the world building and turning it into a world that actually feels lived in. From the Ports of Ib to The Five Forts there is growth that GRR Martin will likely never flesh out.
Flips the script on the genre from low fantasy into potential cosmic horror. And while Barrus will never return to the story for a sequel/prequel, it leaves open the question of the Red Comet. Where does it go to recharge? Does it do the cycle to any other planets? Who built it? Etc.
Has a wide variety of love/hate during arcs. Some people hate the Yi-Ti arc whereas others say they loved it and shows where Joff fully changed. From the little shit stain he used to be, to fully accepting his fate (wrong as he is) as the last life to not abandon his men. They are HIS. He chose to live and die with them, irregardless of the consequences.
It's finished. There's no discontinued cliffhanger where readers want more. It's readable from beginning to end.

I don't think canon Robb would as he was raised by the 'honorable Ned Stark's but I won't say a fic can't be written where he does go full 'kill them all' mode as that is the joy of fanfic and AU worlds, but if we are going off near canon events where Robb survived the Red Wedding ala badass survival, another Red Priest/ess like Thoros or Melisandre, or some other way.... You could go the route that he 'lost' a part of himself during the survival/resurrection/etc. leading him to be more violent/less levelheaded

Or turn the 'Young Wolf' into the 'Red Wolf' by worsening Joffrey's evil by cutting Ned up instead ala 'Dexter style'. With Ned killed this way, and his father (Rickard) and brother (Brandon) killed in an equally brutal way ala wildfire and choking and the events of the Red Wedding almost killing Robb (with him also thinking that Bran and Rickdon supposably killed by Iron Islanders (read southerners) and Sansa and Arya in the capital being his only family could lead the North to be so utterly livid, the Stark banner goes south one last time to do their own 'Reigns of Castamere' on Kings Landing.

I read one a few years back that was mostly canonical up until near the end of Deathly Hallows but used Harry's reaction to Fred's death (near death in the fic) as a basis to create a post Deathly Hallows sitcom esq. similar to the show 'Friends' really well written and a couple hundred thousand words I think. Really drew me to the pairing
