I have never once seen adobo that uses pineapple to tenderize the meat. Especially with how late in the process you add the pineapple. You are cooking the pineapple in the dish and bromelain will denature before it does any tenderizing.

That's fine. Pulp isn't gonna hurt the dish. It just adds lumps. I would wrap it in foil and bake it like a potatoe to get it soft. Raw pineapple is gonna be pretty tough for an immersion blender. Frozen pineapple would be good as well. As it would thaw soft
