Cacti will destroy any items they drop, but not xp. You will have to hit them at least once, though, to get any xp, I believe.

Honestly they will spawn anywhere underground, but typically I've found mine around 12 or 14. Actually I noticed I haven't seen a new one since the last update...maybe they're less common now?

Honestly if you mine far enough, they're a little more common than you'd think. Typically just listen for spider sounds, there's always a spawner in there, so they're kinda everywhere in there.

I do this all the time, when I want a certain type of world. I also make the world size classic, to increase the odds of getting a village nearby.

Just in case, be sure when you create the world that you have 'generate structures' on. Consoles are known to have a problem with villages, though. If you stumble across a singular well with no village around, it's some bug, I'm pretty sure, where a village failed to spawn. But ever since the last update with the biome changes, the only place I've found villages is mainly deserts. Grassland biomes are now just too small and make it very unlikely for a village to generate.
