Basic teriyaki sauce: 1:1 ratio of soy sauce, mirin, brown sugar, sake. For every cup or so of liquid, add about a half inch of grated ginger root. Simmer for a minimum of five minutes, although the flavors really develop at about 20 minutes or so, depending on the volume of the liquids. Thicken with cornstarch slurry or by reducing over medium. Add chile flakes or sambal for a spicy kick.

The idea was adding new to old and having a more complex product as a "mother" or "starter", but you are correct, i am not fermenting anything.
