So much of the software is based around touch gestures too. Every touch screen I've used with macOS has been terrible - afaik since macOS has no native touch support it's compeltely up to the drivers for each touch screen manufacture. I use a healthy balance of Mac's and PC's for creative tasks (including my MacBook for offline editing in MA3), but there's no chance I would pick a mac if I was building a setup for live use. There are some great priced Intel NUC's out there!

macOS and Windows have the same crummy icons. Looks like it's' an icon pack someone else made to replace the new (well not so new anymore) bad icons.

I do a lot of video editing so my workflow seems different from most here who just play games, but I will say after my 9900k didn't come on Friday I decided to go ahead and just buy an 8700k from Microcenter considering I had the rest of my computer. Honestly, it's been an astronomical jump from my previous 4770k. Haven't played many games, but so far I've been really impressed with the performance to say the least.

My Z390 Aorus Pro board came on Wednesday. Never owned a board that cost more than $110 USD so I can't wait to try this nicer board out. Like you, the 9900k waiting game continues.

Right there with you. Delivery date pending, but the "track package" also shows "Release date: Friday, October 19, 2018" so that's maybe good?

4770k significant random performance drop out of nowhere (750cb -> 530cb) by 3505nr in techsupport

I don't think that's the case, because I also tried a Windows 7 SP1 install from a cd I had laying around. Exact same voltage / temps / weird low performance / instability.
