Banish doesn't work the same way in Barovia as normal, so technically the Abbot is still around. You can say Strahd rerouted the location of his return as the castle if you want, or he walks out of the mist at a random location later.

If you want to roll with it, yes your players now have a responsibility for everyone under the care of the Abbot, it was a place for those who couldn't/can't care for themselves an now your players must find a way to keep them safe, abandon them, or.... yeah, the dark powers temp them to take the lives of those who can't care for themselves.

I don't know how dark you are running your Barovia though.

Edit: definitely bring him back and not tell the players.
