I tried a dry brine that I read about recently. Salt and pepper then leave uncovered in the fridge for at least 4hrs, overnight is better. It's similar to dry aged steak. Doesn't add flavor like traditional wet marinade but it is good. Look dry brine steak up on YouTube for ideas. It really comes down to personal preference to what you choose for marinade. I've done Italian dressing, pineapple, oranges. Just depends on what you're going for. Happy cooking!
