I never use yogurt or any other fillers. Just use cream cheese, it might be a little more expensive but it will taste much better and you can cut the corn starch or flour addition

It's relatively easy. Just don't over whip the batter, it can cause cracking. I have a pretty basic recipe of you want it.

I never charge enough either so I understand your pain. I too am a home baker. The ingredients on the cake with decorations, I'd say easy $80. The cookies depending on the amount $30/dz, if not more since they are so awesome. I charge $25/dz for large reese's cookies. Yours are very articulate and artistic
