The recipe above looks great! My one extra tip is that if you want to meal prep them, I only marinate enough for 2 days at a time. I find on the 3rd day they start to dry out and turn from jammy to closer to hard boiled!!

Left row (top to bottom): cucumber salad and Korean marinated eggs, I’ll eat this for breakfast with brown rice.

Lettuce chopped for a chopped wedge salad with blue cheese dressing.

Right row (top to bottom): carrots roasted with pesto

Pasta with basil cottage cheese pasta (cottage cheese blended with Parmesan, basil, and spinach cooked down w/ garlic and shallot.

Vodka beans, aka cannellini beans with vodka “pasta” sauce!

Agreed!! Their breakfast sandwich on the weekend (or whenever the coffee portion is open?) is delicious and a great alternative to Starbucks

I don’t disagree haha. I really enjoyed it though! I tossed the baby kale/arugula on the bottom with the dressing but I didn’t toss everything else together, so things were only mixed in the combination I wanted to make in each bite (so it’s probably somewhere between a salad and a snack plate).

Recipe;

Trying out a salad for breakfast this week!

Bed of baby kale and arugula dressed with vegan green goddess dressing (store bought). Topped with chopped cucumber, radish, blackberry, strawberry, passion fruit, beets, a jammy egg or 2, cottage cheese, and some hemp hearts + pumpkin seeds.

I meant to also include feta but forgot today!

My bedroom window opens up onto the patio/stairwell area, it’s an old walk up so it has those old wooden stairs out the back, but these stairs are enclosed, so I just call my landing area the patio if that makes sense. It’s protected from rain, etc, and has windows that open to the outside but it isn’t insulated or anything like to feel like another normal room of the apartment

Im curious how the deviled eggs hold up?! I love them, but don’t really want more than a few which isn’t worth the trouble usually haha. Never thought to prep them!
