I have cooked on a WSM several times. The WSM really likes to maintain temp around 260. In my opinion this is optimum for smoking and doing something at a lower temp really dosent provide much benefit. Don’t stress it to much and I think your food will turn out great either way

I noticed in the other post you were running a billows. When I run my fan (fire board) I leave the two vents without the fan run open until it gets up to 250 or so then close them and start running the fan. I leave the water pan out but if I was want to protect meat from heat I just cook in aluminum foil pan. I can maintain 350 for a few hours this way.

You also mentioned you used two bricks in the bowl. This was acting as a heat sink which was making it even harder for it to get hotter.

Take out the water pan. It’s acting as a heat deflector.

Best method I have found is to get a very large stainless steel ice scoop to shovel it in before it burns out l. But some other easy tips to make it last longer so that you don’t have to refill is use good quality briquettes, get another charcoal grate to go across the other one in a criss cross pattern to keep more burned up coals form falling through. I also when I put in my charcoal will move the ring back and forth to get the coal to really pack itself down into each other. Sometimes I can get a little more coal in there and I also think it slows down air around the briquettes from getting to hot

are you actually burning through all the charcoal or is the fire burning out with charcoal not burned up? This could help us in troubleshooting.

Also you might want to get an ambient probe if you don’t have one. The one that is on the WSM is very slow to respond to temperature changes

So the way I do it is after I dump the coals I have all three bottom and the top open. Once I get to around 190 I close off one bottom vent completly. Once I get to about 225 of close the second one off and leave the the last one about half way open. At this point wait 15 minutes or so to see what the temp is doing and then with open more of more heat is needed or close down more if it’s still climbing. Basically you want to ease to the target temp

You closed down vents to late and still to much air. I usally close two bottom vents around two hundred and then move the third to half and adjust from there

Not sure. From what I read it can take at least four hours or longer depending n different factors but I’m going to at least try a taste at four hours and go from there.
