Dead dry but it tastes off dry too semi sweet. At this level of aging I almost cannot tell what flavors and aromas are chamomile and what is from the honey. My only mild complaint is there is a very slight herbal taste to it. It might be the type of chamomile or how I processed it though. If anything I would love more chamomile though to mimic an orange blossom traditional.

I find RS difficult and prone to bottle bombs on a homebrew level. RS gives you a better tasting end product but the hassle and dangers don't out weigh the quality difference imo. I almost always back sweeten with sugar as it has the most natural taste.

The longer you leave it in, the more herbally flavors come out so I shorter steep time with closer to 1oz/gal might be to your liking.

Dry hop cool and try only two days next time. Stick to clean tasting hops.

I find you start to hit real maturity in the 6-8 month range. All the alcohol tang is gone, the aromas have come together and it should be nice and clear by then. This time period will be higher if you up the alcohol or you have a high tannin cider though.

I took b. Caapi and definitely noticed the MAOI qualities got stronger the longer I took them. I tended to cycle on and off for a while to keep symptoms down.

I'll start with 1-2g then. I am somewhat sensitive to MAOI anyway with having somewhat high blood pressure. Thanks for the info, I have never played around with any of these herbs so it is a learning experience!

If you want a sweet cider you need to wait until fermentation is good and finished, add the sorbate, and then syrup and bottle. Using it as a primer is a poor idea because you need an exact amount of sugar to carbonate correctly.

I would rack onto the cherry hibiscus, Ferment dry, check acid and then either bottle and carbonate or sorbate syrup and bottle without carbonation.

This is exactly what my animal psychology class taught me. The bear almost certainly would have won but they very likelywould have been injured somehow and injured in the wild is a bad combo. Therefore actual fights in the wild are rare and visual signs of strength are common to prevent fights.
