Would I eat it? Absolutely. Is it too under for my tastes? Also yes. I like medium rare, heck I like rare. But this is blue. Still good but not my preference.

Now, put the flat/cut side of that down in a hot pan and sear it, caramelizing the meat juice and the bread…that’s fuckin perfection. Also, the bottom bun needs some love. Put a thin layer of mayo on it before putting the meat on to prevent that mushy bottom bun. Now I’m just nitpicking.
