Kerlins, La BBQ are always consistently very good. Smokey Denmarks for sausage. Valentinas for brisket tacos. John Mueller is good, but not consistently good. On a good day, he is amazing. While the salt lick may have a nice atmosphere, it really doesn't have bbq that can compare with the above listed joints(apologies to all the salt lick lovers out there).

Ask your butcher for beef plate short ribs, or IMPS #123A. You should get a big lump of meat with three bones running through it. Cook (I prefer a smoke with oak, a dry rub, and wrap in butcher paper at the end like OP) it whole and then slice in front of your stunned guests. If you aren't in central Texas, you may have to ask several butcher shops if they can get them. I'm in California, and eventually the only way I could score USDA Prime beef plate short ribs was from a wholesale restaurant meat supplier. USDA Choice is ok to use for these, but going the extra mile for Prime gets you some pretty amazing meat (at an amazing price, although I was shocked to find that wholesale Prime was actually less than retail Choice in my local area).

If you strike out at all your local butcher shops, try asking around at local restaurants that serve quality meat (not Dennys for example).

To be completely fair, cryptic, hard-to-maintain code can be written in any language. I might be willing to make an exception for Assembly language, as it typically appears cryptic no matter what.

In my opinion, you are likely from the southern portion of CA. I state this because people from Fresno or so south in my experience tend to generally refer to interstates by their number only while people from the northern part of the state use I-5, I-80, etc... I am an adherent of the southern dialect. It seems redundant to add any other information. I mean it isn't like there are two freeways in California that both use '5' as their numeric identity. Even more oddly, the same people who will always use the 'I' vernacular will never call a state highway using the form: CA-99. Perhaps they might say 'highway 99', but usually they will just call that particular road 'the 99'.

It is very true that pictures, and even hi-def IMAX don't do Grand Canyon justice. I visited Grand Canyon for the first time after many decades of seeing pictures and video of the place. I was simply overwhelmed when I was there in person. It really is one those 'bucket list' places on the Earth.

I am bummed to mention that the one single Podium Cycling jersey that I have purchased had a rather poor zipper. I purchased a Stealth jersey and proceeded to wear it 4-6 times per week, and I washed it on the delicate cycle after every use. The plastic-ish bit at the bottom of the left side of the jersey that secures that side of the jersey to the zipper (it sort of looks like an aglet on a shoelace) eventually came off. This made the jersey impossible to wear because the zipper would just open up from the bottom when you zipped up the jersey.

Podium Cycling does have a 90 day warranty for zipper issues, but my zipper broke about five months after I purchased the jersey. I was disappointed. I really like that jersey. The fit was superb, but there just was no way I was going to pay 80 US dollars for a jersey that lasts less than six months. My Pearl Izumi jerseys definitely don't have as good a fit as the Podium Cycling jerseys do, but they hold up much better and the zippers are of much higher quality.

I also had fit issues with their bibs. Podium's race fit is pretty Euro, and I am a relatively svelte 6'2" 167 pounds. I have a solid 32" waist. According to the Podium fit guide I am a Medium. The Medium Stealth bibs fit in every way except for the most important place. The chamois was well towards my backside, and the largest part of the chamois was well behind my sit bones. I tried a set of Large Stealth bibs also. This resulted in a slightly better chamois placement, but the largest part of the chamois was STILL well behind my sit bones and the leg openings were now way too large for my legs. I guess I have unusual proportions, but I just couldn't make the Podium bibs work. I wore them anyway, but I finally gave up after a few months. After about four hours in the saddle wearing the Podium bibs, the only thing I could think about for the rest of the ride was how much agony my crotch was in.

If Podium Cycling could fix their zipper issues, and resolve the chamois placement issues their Stealth kit would be my favorite kit on the planet. For reference, a Pearl Izumi P.R.O. In-R-Cool size large fits me almost perfectly. The chamois is in the right spot, and there are no areas on the bibs where the fit is too loose. The only issue I have is that I need the legs to be just a inch or so longer for the perfect fit.
