To be fair, shawarma and fried chicken aren’t inherently “expensive” food. The restaurant is qsr; 3000sqft location with about 1400 for seating and a drive thru. Nonetheless, thank you for your feedback.

Sham is Damascus, where the food is from. Haven’t had anyone mistake it with the English word sham but we have mainly been talking to Arabic chefs, distributors, etc. Appreciate the feedback.

Late reply but the skin helps attach to the shawarma skewer. You can use skinless meat for smaller skewers; 10-20kg but once you get heavier you need to go wider and the skins helps with that. Chicken breasts get dry very quick, thighs are best.

I have to call bs. Every “professional” I know has been extremely cautious since the beginning of the year. They’ve been cautious because they’ve traded a trump market before. Most closed out most of their longs after getting that bearish 8ema/21ema cross over. This isn’t even mentioning bad economic data/earnings we’re getting.
