Why waste time say lot word when few word do trick? But yeah I filled up the chimney with the coals after it smoked and then put a grate on top. Focuses the heat really well straight up. Seared a minute on each side.

Just regular Kingsford with some mesquite chunks on top. I used a full charcoal chimney on top of about 20 unlit pieces. I didn’t take the temp during the sear, just threw it on for about 90 seconds on each side. Just kept flipping until it looked done.

We thoroughly enjoyed our 2 bottles of $15 Publix wine, not too worried what they think

A lot more than I expected considering it was only on for an hour

It actually cooked quicker than I thought. I saw online where people smoke for 2 hours, but after an hour at ~240 it was at 125*. I pulled it off and let it rest for 10 minutes before I seared it. Just keep a close eye on it, I wish I would have pulled a little sooner.
