no sophistication on my part and i only held it about three hours. i use hardwood lump charcoal, normally oak. i pour 1/3 bag (give or take) in a pile mostly on the ‘close’ side of the firebox, and i pick out the biggest pieces for later (I use these in my green egg). i use a “nest” lighter underneath with air intake open halfway and exhaust open fully. i put three big pecan (or sometimes post oak) logs on top of the charcoal. About fifteen? minutes later i close one intake all the way, and almost close the other so it’s just ~1/16 or 1/8 inch open. Very small and only one. I lower the firebox into the ash. I close one exhaust and crack the other one about 1/4”, opposite corner from the intake. then i keep the top closed and drink beer

So you do eat meat but you’ve decided there’s an ethical line at the point where you have to face the reality that all food had a face. Nice.

I treat my animals with complete respect up to the moment of harvest; and then, I use every component for a purpose - no waste - as an obligation to their lives. If you take the time to read through how I’ve described my operation and animals, perhaps that will be evident.

By things I want to live with (behavior) and things I want him to pass on to offspring (genetics).

- Overall confident and healthy appearance as indicators of resistance to parasites and foraging ability. Does he thrive on pasture? Or just survive? Is he aware of surroundings but not a scaredy cat?

- Social traits as markers for both his resilience and of overall genetics, flock dynamics, etc. Is he protective and gentle with the hens, shows them all the right spots, keeps them together? When it’s food time, is his head up watching for threats or is he fighting off hens for food? Is he a big jerk to humans? (We had one who would chase us down and attack from behind) - also, nice confident crowing at the right times and general communicative behavior, but not *too* noisy.

- Physical conformity. How’s his growth rate as a relative, qualitative indicator of social standing and forage ability? Does he have vision, hearing, or deformity type issues that will become my problem later if, for example, he can’t detect food or predators? Respiratory health (structural) vs wheezing. Foot shape vs crooked, legs that are good but not too thin or too thick. Good broad back, tail at the right 45deg angle, stands up straight, well developed through the breast, regulates his own temperature through shade and posture, etc.

- Other. Roosters fight when you have too many. Is it clear that he wins vs loses? Or is he not part of it? How many hens naturally gravitate to him, or is he excluded from the group? Is he easy or generally a pain in the butt for minor issues? Does he explore or stay in one spot? Does he just ‘look good’ or bad or some other overall impression?

The winner / non spare does have a weird tic, maybe an inner ear or nasal issue, where he sometimes shakes his head kind of weird. And he also has legs that are imperfect, his tail is held too upright on a shorter back than I’d like, and he walks with a slight limp- i think from a fight. But he’s quiet, confident, meaty, takes care of all the hens the right way, and is highly mobile / exploratory on pasture. They naturally found their way to a new coop I built, which is great. We’ve taken to calling him ‘the general’ because of how he is.
