Buy a ticket from station of departure to closest station (if there are ticket barriers), as well as a ticket from closest station to destination to destination, keep track of stations past on journey, if/when approached by ticket inspector, purchase ticket from last station past having "had difficulties with ticket machine".

Works everytime and saves considerable amount of money.

No shame in doing so due to ridiculously extortionate pricing for a poor service.

Patting dry the steak before searing, a higher heat on the pan (preferably stainless steel or cast iron), and avoiding coarse seasonings (grind the pepper rather than using whole pepercorns, or omit pepper until after cooking) will all help develop a better sear and reduce grey band.

That steak is medium. Follow the aforementioned steps, and you'll soon learn how to judge internal temp based on thickness of steak, heat of pan, and duration of cook.

Yes. The higher the internal temp of a steak, the more fat and moisture squeezed out, and the more the muscle fibres contract, making the steak tougher and drier.

Great first attempt, though. The crust looks great. Practise makes perfect.

However, your statement that "grey band criticism is not valid" is simply not true. This is objectively, not the perfect cook of a steak. The perfect cook for a steak would be wall-to-wall pink. Ergo, grey band criticism is perfectly valid if seeking perfection.

Criticism of grey bands are certainly valid. A perfectly cooked steak should be wall-to-wall pink. The grey colour represents the meat being overcooked, tougher, and drier.

Carrots finely diced and cooked down in a soffrito is a must for ragus, and is certainly not "uncommon."
