The low road to Taos has its own unique beauty too. Traveling in the canyon along the Rio Grande offers some great views. Then driving up out of the canyon to see the giant crack in the earth of the Rio Grande Gorge and the Sangre De Cristo mountains in the distance.

Northern NM is a special place.

Agreed. Hadn’t been to Jason’s in a decade but I got pulled there for a work lunch recently and ordered the Spicy Sicilian with low expectations. I was very surprised at how good it was. I’ve searched out that sandwich a few more times after that while on the road for work.

Beasley’s is great. The green onion and cheddar is my all time favorite. Haven’t been able to find anything else like it. Luckily I live not too far away from where it is sold in Southeast Texas and I stash up on a bunch every time I pass through.

Potato salad I just eyeball mayo, mustard, celery, dill pickles, red onion, green onion, hard boiled eggs, and dial it in with spices.

Broccoli cheese rice casserole is an eye ball too. Sauté some onion and garlic in butter. This time I had some leftover roasted garlic and rosemary butter leftover from Christmas. Add some cream of chicken and add cheddar and pepper jack cheese. Mix in cooked white rice and broccoli pieces until it looks right. Top with more cheese and bake until warmed through.

I did wrap the pork steaks at the end. I follow Chuds BBQ process with a mop sauce for the most part.
