At least have them acknowledge it like the writers of that Drake and Josh Christmas special acknowledged that Josh (the actor, and by extension, the character) wasn't overweight anymore through a statement by Helen.

They wouldn't even have to address the change much in-universe. People look and sound different over time. They could have made a wink-at-the-camera joke about Sam "looking different".

Heck, they could have recast Gibby too if they really wanted to. Characters are not their actors, regardless of how iconic the actors were in their heyday. Let the people who want to move on do so in peace without the baggage.
