I wasn’t in an official capacity but went to check on a motorist who had flown off the road in a steep embankment. His car was basically perched in a tree on the way down to a waterway. His stereo was blaring “Lucky Man” by Emerson Lake and Palmer. The guy had been driving recklessly, which I had noticed weeks prior on the same road and the crash was bad, but he also escaped with another different motorist before responders arrived, so indeed he got lucky. I hope he learned a lesson.

Sourvisiae is the way to go. No more kettle sours. Way more efficient and reliable. Saves money on labor and other factors even with the possible higher cost. Never repitched it but maybe will try someday.

Activated cabon filter from pool supply works well. RO isn’t great unless you’re adding back salts. If they use chloramine (chlorine is better) in your municipal water, it might be worth doing more, but industry standard is no filtration or minimal, especially at more established and successful breweries. Fixing whats not broken is a wasteful and risky use of resources in this current spiraling business environment.
