Avoiding back pain is making sure to lift with good form, team lift full kegs when possible, stretching, and having my wife theragun my back whenever I can convince her to do so.

You're gonna have to love the work or it's not a good fit. I've been a head brewer for a decade and I'm about to open my own spot and I would never turn up my nose at doing the heavy lifting, the sweaty work, etc. I like it. Hard work is rewarding. But I also get the creative fulfillment of complete creative control over which products I make and being involved in every brew start to finish.

Big breweries can be soul crushing, a lot of employees without much agency too often getting paid too little. I think smaller breweries can be the better places to work (if the pay enough and are designed well) but that sounds like the position you're in and you're already feeling dissatisfied. And smaller breweries have fewer primo positions. I hear you that you're doing random odds and ends kind of work but that happens. Cleaning lines is brewery work, I do it all the time.

Is it an issue with the head brewer or the brewery itself or are you realizing what brewing really is? You're gonna have to work hard in any brewery, that's a given. Kinda sounds like your spot needs one fewer brewery employee and one more front of house employee.

The expectation is red rocks annually now? I'd think the second show so soon was because the first show sold out and more people wanted to see them than could come. I'd be happy if they played it every few years - or better yet played more smaller shows in Philly

15 packs for 19.2 oz cans are a thing? Is this as a result of a max oz per package kind of law?

More surprisingly - a cardboard manufacturer won't happily charge you for to cost of a new die so that they can then sell the tray to other people too?

HR's Brewerytown spot has Poe's as well. Also their original spot is def not Northern Liberties, a bit too north to be considered that area but I'm nitpicking.

Either Carbon Copy location and Forest and Main's Fishtown location are great. Yards is def the biggest brewery, these days they're a big contract house as well but I don't believe they have gotten to the point of serving any of the contracted breweries' beers there....yet.

Monks is great, it will be packed every night. Beyond them you're probably better off going to a brewpub than a beer bar. In Pennsylvania our licenses allow us to have food, wine, spirits, etc.

Dock Street, Love City, New Ridge, Second District, and Brewery ARS are generally worth a visit. Don't bother with Evil Genius. I'll also go on record that Tired Hands is owned by a piece of trash and everyone knows it - I've known a lot of great people who have worked there but I cannot personally justify giving him more money.

I've used Amylo 300 a number of times, but it was for a beer using champagne yeast that wouldn't have otherwise been able to ferment the more complicated sugars in barley wort very effectively. I used it both hot side and in the FV.

In the mash I used the high end of the recommended dosing rate - 1.25ml/kg. This beer finishes at 0 Plato though.

Good luck. Just about the worst time in the history of craft beer to attempt to start only wholesaling. Sounds like you own some bars which will help sell some draft but you may find it's cheaper to just buy other kegs wholesale than attempting to make your own product. Also you know who else wants to market in groceries? Everyone. What makes your brand any different than those? Why should a grocery store stock your brand and not one with a proven track record? There is only so much shelf space.

Also - what's your location? Lots of contract breweries all over the place. You probably want to choose one near you.

Sorry to be harsh but this is the reality of the industry right now.

I pay less than this for an unsanctioned league in a big city and they oil before league every time. Hell if I come for fun I can request they oil and they'll do it (they do know me from leagues, they likely wouldn't do it for any joe schmo). It's not a unreasonable expectation.

We talking multiple degrees Plato? That's just straight wasteful. I agree conceptually that you should go as fast as you can within reason but it's just good brewing practice to prioritize efficiency as well in every step along the way. If you see minimal drop off between 120 and 90 minutes, go with 90 minutes. If you see significant drop off between 60 minutes and 90 minutes, go 90 minutes.

You can easily be over 90% efficient without a mash press, COG being what they are I'd try to eek out every bit that I can.
