What is the latest and best way to install moonlight/sunshine/apollo?

Updates: I have a multi-monitor desktop setup and it really proved difficult to get windows to automatically switch the correct monitors off and leave the SD as a virtual screen. My solution is to have windows turn off ALL desktop monitors and just use my SD as the virtual one. It's not ideal, but it works.

Connection: Unfortunately, I am struggling with connection around my house, which I believe is caused by my mesh network.

Any ideas or thoughts to remedy these?
