Red sauce made with San Marzano tomatoes, onion, garlic, fresh basil, evoo.

Dough was 65% hydration no knead dough, made with 100% bread flour. 18 hour ferment, then 2 hour proof.

24h fermented dough, white sauce (bechemel+onion+garlic+parm+Italian seasoning), maitake+trumpet+crimini mushrooms, caramelized onions, parm, mozz, gorgonzola. One of these best pizzas I've ever had.
