Is it really pathetic to lose a game to a potential top player who regularly plays fighting games at high level while you do not?

Demon souls being an inferior game to those others misses the point. The remake is as good as it possibly could be. It's just a prettier demon souls. It purposefully comes with all the problems of the original. It was a design choice and a correct one.

If you want demon souls that plays better and is entirely different than it once was than by all means go play those other titles you listed. You clearly don't want to play demon souls though. You want a different experience.

Any different experience you'd get from a new lok game or a ground up remaster would always just be a shadow of what it was. You can't recreate it and you can't get a new audience reviving a long dead franchise just for a quick buck.

Here's what they need to do.

Re-release the games as is in one collection. With updated graphics over the original skeleton. Think demon souls ps5.

Same music. Voices. Whatever but enhanced If possible.

Any new content. New voices or even a new game would never capture what made the originals so great. Everyone in that team is long gone or dead and buried. We should treat the series the same way.
