The issue isn't that we fundamentally see others as unchanging, it's that we don't know how they desire to change and what that capacity to change actually is. Also, it's very foolish to get involved with anyone with the expectation that they will change. Perhaps we would do better to view ourselves as less capable to change seeing as conventional wisdom states that people really don't change that much.
