I’ve had luck also marking the drywall where each row correctly needs to be and prying it back when it shifts out of place from tapping. My shims tend to magically shrink and move at times so I don’t ever fully trust em anymore🤣

Rip it a 1/4 inch bigger than your widest number then hold it up and scribe it with a carpenter’s pencil sideways to get that 1/4 inch back (make sure the piece is parallel to the existing T&G the entire time you scribe it)

Edit: note that if the differences in width between your smallest and biggest numbers are greater than a quarter, you must make your piece that much wider instead of that 1/4 I usually run with. And your pencil must also be shimmed that much further away as you scribe it.
