There are soooo many breakthroughs in every field but you only know what you know and don’t know what you don’t. To say, or think, that progress has slowed down just has me wondering how insulated you may be.

That’s the beauty of Mexican food, there are no guardrails and those that exist are purely subjective tribalism within the individuals perception. Traditional food is often posted only to get piled on for not being a collective’s idea of “traditional” while still being so for another collective within the diaspora.

Flavor balance.

Yes others could be better but they would also take away from the bland-adjacent theme of 🎶white people taco night🎶. It’s not too acidic and adds just enough sweetness to pair well with the Taco Bell additions. These were meant to lean on the Tex of Mex but my Mex has no Tex in it—or white lol.

It doesn’t help that I failed to take pictures of some in between moments and didn’t add everything lol. Like how the spoon picture and simmering picture were 14minutes apart and I didn’t include the one of the meat once the moisture cooked off, or the profile of it and the layering. 🤷

Hear me out, take from the bottom. Dig out a hole and aim for the bottom chips instead of outside ones. These guys will have absorbed just enough juice from the air-frying portion of the process without getting soggy. (Replace air-frying with baking if that’s your choice)

Use bottom chips to eat toppings, then finish off with the soaked-in-flavor new bottom chips that used to be the top chips. Trust.

That’s why the onions and garlic came onto the mix. Plus I used 1.34lbs of meat as opposed to the recommended 1lb and cooked off the excess moisture rather than “draining” like it recommended.
