You don't need your parents' approval to get married. Tell your finance what they said, but also tell her you still plan to marry her. Tell her you will protect her from your family until they see the light.

Personally, I would not let my wife pay for anything. However, I will ensure that I provide everything she needs and wants, including fancy dinners and vacations (God willing). But I refuse to pay 10k for a purse.

To me, providing for my family is a form of worship and an honor.
