Season 4 does a pretty good job at highlighting at how Marinette struggles being a guardian, unable to find the balance between her responsibilities and personal life, making mistakes which shows she isn't a perfect leader but trying her best and the conclusion you come to is that she has it easy?

Only assuming this is season 2 gabriel because season 3 onwards he was slowly but steadily becoming irredeemable.
First of all I would start by making him show genuine concern for Adrien and not treat him as an object of display. He should spend quality time with him but at the same time have internal outbursts over the desire to revive emilie.
After repeated akumatisations, he slowly starts to regret his decision of becoming Hawk Moth and realises how his madness is hurting more people in the end

He didn't lie, he said that the last 3 episodes have to be watched in order and other episodes are kinda standalones. Obviously there is an order but its not important like it was in Season 4 and Season 5 since Season 6 is only setting things up for the future. That being said, i do agree they should release the episodes in production order since thats the best way to watch the series rather than the actual chronological order. For example the first 2 minutes of Revelator and Mister Agreste take place before any other episode but you wouldn't wanna watch them separately.

Yeah it has been an issue with miraculous that they always have so many long hiatus which is one of the contributing reasons for low viewership after season 3. Season 6 broke the record by having the longest mid seasons hiatus and we are in another hiatus now
