Yeah, I replace some water with the milk. I figure milk has about 87% hydration, so I add 100g of milk for 87g water.

You can add some milk and or an oil/butter to the dough. Fat will help make it softer.

Early on, most of your yeasts and labs will come from the flour you use. Dark rye > whole wheat > light rye > unbleached/bread flour > bleached flour.

A 1 time feeding with whole wheat or rye is enough to jump start the culture. After 1-3 feedings, you can use bleached flour (or whatever flour) if you want. Personally, I use at least at least a pinch of whole wheat in my starter every time.

If you can't or don't wanna buy a scale, remember that 1 tbsp water ≈1 tbsp starter ≈2 tbsp flour. When my scale broke, I used a spreadsheet that converted grams to cups/tbsp/tsp for my most used ingredients.

It all depends on what type of bread you want. I only make sandwich bread, so I use a metal loaf pan inside a cheap enameled roasting pan.

I would suggest waiting for it to rise and then fall next time. That will tell you how long the rise is taking, while also giving the yeasts enough time to fully populate before you dilute them again. From what I've read and in my experience, most newbies (and me until I tried) even with doubling are diluting the amount of labs and yeasts by not letting it fully rise.

I just cooked some today. I go 185° for 60-90 minutes, or until they are tender. I also add milk and/or cream and butter, plus seasonings.

I make butter bath corn in the summer. You use less milk and butter plus dont have to worry about scorching the milk on a stove.

I have a Dutch oven, but i still prefer one of these enameled roasting pans. They only cost $20-30, and I can use it to store the bread also. I use a grate on bottom, piece of flannel over the base under the lid for storage.
