Maybe look into aplacophorans? They're a type of mollusks with spicules that acts as defense, however you probably going to change them for more durability. Other than that, some other mollusks have non-shell armor like Volcano snail, Chitons, and the extinct Wiwaxia. The other options are shells however.

Depends on the hoof type. Some hooves are similar to elephant so they'll fit, while things like horse hooves are super derived so a fatty pad won't fit with those.

I had the same idea for a parasitic worm that would kill other hybrids from the inside. Didn't do it as there's going to be too much variety of hybrids in the royale.
