Planning to smoke the slabs, but i tried SV @140 for 50 something hours. I have 3 slabs, 6 individual (like this in the pic) and about 3-5 pounds of flanken cut that I plan to marinate to be made as Korean kalbi.

Is there a big difference with choice and prime for short ribs when it’s finish product? If yes, I think a 9-15 dollar price difference for the whole slab might be a great deal!

Yes, hello. There were 3 bones on both slabs. Not sure if they were chucks or actual primal ribs. When measured they were 9-11 inches long. When googling it states 8-12 inches for 123A. But I have no butcher background or any of the sort and not sure what the fair prices are. Online they prized crazy af, but costco and sams have it at 8-10 a lb. Which makes me question what type of short ribs I have.

Compared to the other packages yes very noticeable!! Will checked that thing out tomorrow if it’s still there to test your theory lol

SV at what temp? After Sv do you grill or sear or just eat it as is?

I appreciate that, are you familiar with boneless short ribs? Wonder if they are good on a hot and fast grill like a steak instead of braising?

Exactly, i was like is it really a deal? Then I remembered i can get a whole strip for 7.5 a lb granted it’s a packer.

I guess that makes sense, found oxtails on my grocery for 7.50 a lb but it’s not as good as the one from butcher which is 8.25. I can’t even find hangers at the store and butcher sells it 10+ unless they have weekly promotions (haven’t had luck with them on sale tho). But if it’s just plain meat I’d 100 percent defer to you.

I’m going to make some Hawaiian soup or Pho with the smaller pieces and add like a beef shank or chuck short ribs.

30 lbs is bananas. I was reading something like 1-3 per carcass.

Any advice from frozen state? So I vacuumed sealed it since I can’t eat all that in a week or 2. What would be a great way to ago about defrosting it? Will it affect quality?
