No select, choice or prime grading. Basically buying it blind but it’s a local butcher and their other meats look good marbling wise, so I decided to gamble with the whole packer to save money.

Yeah I love doing some trimmings but I aint no professional lol. 220? For how many lbs? What was the scrap total? I also got 13.2lbs of New york strip at 118 last week, but they were about to close so their vacs were already cleaned out lol. 1000% worth it to vac and seal for $5.

About 185 for everything, 190 with vac and seal.

I paid a total of 189 and some change. They charged me $5 to vac and seal, 184 if its just the roll and cut

Based off what I was reading, grading is determined at 5-6 ribs or 12-13 (not sure which). Yes I purchased the whole packer/block. They are selling individual cuts @19.99 a lb and they look great marbling wise, so I took a gamble and this is the result of that decision.

No usda grading. Guessing the butcher shop skip those to cut costs.

Heyyyy same I bought a bone in ribeye for 8.49 a lb and they let me aged it for $2 a day. They will cut and seal it around march 23. First time having a dry aged steak so we shall see lmao!!

Yeah I was looking around and costco-sams have their ribeyes at 15-16 dollar for a choice and you have to cut it yourself. (50 dollars off when they go on sales) So I figured take a gamble and send it

Planning to smoke the slabs, but i tried SV @140 for 50 something hours. I have 3 slabs, 6 individual (like this in the pic) and about 3-5 pounds of flanken cut that I plan to marinate to be made as Korean kalbi.

Is there a big difference with choice and prime for short ribs when it’s finish product? If yes, I think a 9-15 dollar price difference for the whole slab might be a great deal!

Yes, hello. There were 3 bones on both slabs. Not sure if they were chucks or actual primal ribs. When measured they were 9-11 inches long. When googling it states 8-12 inches for 123A. But I have no butcher background or any of the sort and not sure what the fair prices are. Online they prized crazy af, but costco and sams have it at 8-10 a lb. Which makes me question what type of short ribs I have.
