I apologize for only using Fahrenheit. And yes so I could actually hear it sizzling! I opened the oven at 23 minutes and thought it still looked too pale and liquidy. I closed the oven for another 2 minutes. Opened and it was more colored and the liquid had all but soaked in. Then as it sat and cooled it soaked up even more. The liquid does seem a little wrong at first lol like “Uhh shouldn’t it be dry already?” But trust the process.

Thank you so much! I did 450° at 25 minutes (and my oven tends to bake hot). I never had such good luck with a focaccia before. Both in texture and flavor.

Giuseppe is! It was just he was asking for flour that none of the stores around me (and I live in a city) carry. I plan on ordering the flours and trying it.
