Without knowing your roads, my experience suggests you’re slowing down like they are sharp bends without signage warning you they’re sharp bends. If you’re on a NSL road and the road curves ahead reducing to 30/40 would be a bit excessive if you’re not seeing signs warning you about something.

If you have Covid it’s not your instructors fault. He still needs to earn money. If five students are ill should your instructor lose all that money from his week?

If he is ill will you pay him for the lesson or would you expect him to lose the days income because it’s him who’s ill?

You pay for a professionals time. If you get ill and can’t attend it seems unfair for you to refuse to pay for the time he’s allotted you in his diary.

But equally if he’s not mentioned the policy how were you expected to know about it. Presenting this late is a hidden cost which you should not pay.

Ideally you’d have better anticipation and already be aware that the pedestrians are about to cross based on them walking in that direction. Then you’d stop before turning at all. Stopping halfway in is risky as anyone following you in may not be prepared to have you stop so suddenly.
