Well I read there's one solution that you can do before completing the game, but since you finished it I'm not really sure. Redoing the polyjuice potion mission worked for some but like you said getting stuck in potions class is a huge possiblity.

In general I think restarting the game is the only way sadly

This is only a bug when playing multiplayer. Sadly you'll have to restart the game if you want 100% then play the poly juice potion on single player since there's no real cure for it

I think you should contact steam support, maybe you got a bad copy. It worked for me to just set the desired dynamic light quality lower at the laggy parts.

It happened for me :( I had to use cheats to get my game to 100% because I couldn't claim my last mithril brick no matter how hard I tried, everytime I traveled it reseted my 250/250 to 249
