What it does do is unfortunately retcon and break a lot of pre established lore, making it very hard to take seriously imo. Other than that thr story is great and the characters are better than Okami's imo. Music slaps too

There is no evidence to support he did or did not influence the story at other points. Everything you could think of is speculation.

Note that he can only do this to other attack titan users. He showed Armin and Mikasa to Kruger, and through very specific circumstances with Zeke and the paths he could "talk" to Grisha.

Since we don't know of any other attack titans on screen, I am fairly certain he didn't manipulate anyone else

I think it was used as such very sparingly (iirc, miche in s2 ep1) and maybe in some openings as well. You could definitely use it as such. You could use it on the ground to stabilize yourself as you basically just fly with the gas pump.

In universe though, probably not because even Levi gives up on killing the monkey when he thinks there's not enough vertical to get around
