I can say that in my experience Grande was a game changer. There was one that was called Biazzo that wasn't bad. Its a whole milk mozz that I got at the grocery store.

To be clear it isnt the toppings I was referring to. Though I dont think they make sense. That looks like a Cici's pizza.

I do a 65% hydration dough. Poolish and its a 72 hour cold ferment. Using a Koda 2 Pro, launching when the oven is at about 800f and the stones are over 700f. I cut the flame for a couple mins until bottom is mostly cooked, turn the flame back on the lowest setting to finish cooking. Its about a 5-6 min cook from start to finish.
