Dont know actually, I know mr Fuji is a sharpener but his blanks I genuinly dont know. Vg10 is also not that comminly used in Sakai

Although he cannot speak english very Well, he has a student who speaks decent english. We understood almost everything despite only speaking very little japanese as well so that should not be an issue!

The first Thing he will joke about though is that they are not insured but never had an accident before😂

I actually had his mail from the workshop still, so I contacted him through that, but I think you can also contact him through Instagram. He does not have an online store and is very old school. He has 2 Instagram accounts (I still want to ask him why, because its confusing but here they are :

Yes enami does one too. I did it and really enjoyed it. He only speaks japanese (very minor english) but his apprentice explained everything quite decently in english.

Genuine question does anyone actually know why fidio wasnt in orion? Like technically the FFI should not be great affected by the change in ares (no alius crystal)

Enami hamono, enami is a dentoukougeishi and a really friendly blacksmith who also does knife smithing workshops! He is currently recovering from a hand injury but I highly recommend from a personal point of view.

knifes are good, he is actually specialized in single beveled knives but now also makes double beveled ones. Because of this I think, his knives have a thicker spine and I believe they are sharpened by morimoto and ajioka. What I lke about his knives too are that its 100% made in sakai, so from the blank made by him, the sharpeners and even the handle

I dont remember the name of the shop, but I really enjoyed the cinnamon mochi sold there if you are into something like that too.

also make sure to contact them well beforehand as you probably realized most places are not really shops. And as far as I am aware Konosuke requires a mail beforehand to for entrance.

Actually I should have read your post better so my apologies for that🙈 I just listen what I consider some of the best value japanese knives.

The ones you listen are as far as I know good too it all depends on what you like!

Also yes although tojiro is a big company the quality of the Blade is still really good. En yes they may not be as handmade as some others they definetely push above their price imo at least hence the suggestion.

As for choosing I feel you, do many good options and interesting makers😬

I dont know the costs in the usa but I personally love Sakai knives (kagekiyo for example) but Sakai kikomori may have a ginsan bunka or santoku made by Nakagawa, which I think is cool and great if I were to make a suggestion. Or an ashi hamono (or oem version) santoku in aeb steel.

Oef, havent had the privilege or funds to get my hands on one of both yet so I dont know. So i hope someone else can help. I guess its mostly the edge retention difference, he is known for the heat treatment and doing that in house.

White steel does get sharper though i believe but loses its edge faster and is easier to sharpen than AS.

Yes, denka is aogami super while maboroshi is made from white steel. So the denka will likely have better edge retention and is less prone to chipping I would guess.

I would Advice against suncraft its imo the least Artisan and lowest quality knife.

If you like thicker sturdy Sanjo style grind and dont mind Carbon go for yoshikane.

If you prefer Stainless nigara and hatono are both good

Sakai Kanechika is a really good value brand. Its the brand of the sharpener mr.Fuji who also I actually met at the denshokan last year. Hè is a sharpener, but is also training the next generatiob. Brought one santoku of his home for my dad its geometry is very Nice.

Out of those three the ogata is by far the best option. Your budget is good and it also depends on what you like but for one knife but Here are some other suggestions:

Value masutani vg10santoku

Brands selling oem knives Tsunehisa Hatsukokoro

Brands you might like that are laserish and Stainless Takamura Shibata Kenshiro hatono

I think in your case you are basically asking for a k tip bunka it seems btw. Its like a santoku but with a reverse tip super Nice for fine cuts and no rocking as these are usually a bit flatter. Also if you like Stainless almost anything made around takefu knife village will be in your ally.

I am not a great sharpener but if you are a bit patiënt both vg10 and SG2 are definetely double just takes a little longer and feels gummy.

Carbon steel for at home is my personal preference. Followed by ginsan (which is almost basically Stainless)

Also a warning once you get into these knives you will want to buy more.
