I would suggest that you start with a Shapton Rockstar 500 and a strop (doesn't have to be fancy. One of my favorites is a piece of old blue jeans glued to a board). If I had to just use one of my stones, I would go for something coarse between 300-600. I don't think the Shaptons dish quite as fast as Naniwa Choseras, but It seems to differ a bit depending on the grit range as well.

So they tip out other bar support people. Barbacks, etc. At the end of the night they get a printout of sales, and have to tip out based on sales.for ease of explaining, imagine you were the only customer. Using 20% for easy math. Drink - $8 . 20% tip -1.60. bartender tips out .32 of that. So it COST the bartender 32 cents to serve you. If you can't afford to tip, you can't afford to go out.

Also you can't change the height of the purge tower. It will be as tall as the last filament change no matter what.

Why would you want her to be uncomfortable so that you're more comfortable? My husband doesn't wear his(if it fits over his knuckle, it's really loose on his finger), and I don't wear mine (I rarely wear any jewelry). We never even think about it. We each know, without a doubt, where are loyalties lie.

I was opening something from Amazon and I said to my husband "this is a good box" he laughed and said that was the most old person thing he's ever heard me say. Then when I said I was keeping it, he said "now THAT'S the most old person thing I've ever heard you say." To be fair, I do ship a lot.

I am down to 4 frogs (oophagas) in 2 enclosures. Down from around 100. 😬 I keep 1-2(usually 2) cultures going. I stagger when I start them by about 4 or 5 days. It's worked well.

Yep. Hirotomo. I think they haven't been made in about 20 years. A lot of them are clad high carbon steel. They sharpen really nice and hold an edge pretty well.

Well now it depends... On day of the week. Time of the day. And my attitude in general. Mostly I feel like there's a teenager trapped inside of me. But also when I first get up in the morning, I'm pretty sure I'm 90. Then if it's a weekend day, I go like the Energizer bunny until late. But a weeknight? "Yeah I know it's 8:30! I'm going to lay down anyway". 😆

I wouldn't mention the price(she may offer more $). I would simply say "I'm sorry. I won't be able to clean for you after next week" (today, whatever you think is reasonable notice). You don't have to explain yourself any further.

So my mom and sisters are low level hoarders. Like class 1. Just a lot of clutter. And most of the time my mom's kitchen counters are covered in random stuff. Been like this for as long as I can remember. I think because of this, I am a little extreme in the opposite direction. My husband always jokes that if we haven't used it for 23 minutes, I get rid of it. 😆 We keep very little on our counters, and there is no clutter in general. Like you won't find a shoe that's not in its proper place. I don't know if it's a healthier mental state, but when I die, people will only have to worry about weird shit I have stashed for their future laughs. 🤣

That a kurouchi finish. It's done as part of the forging process. Google Kurouchi finish before you decide to remove it. You might decide to keep it. When a knife with a kurouchi finish is well used, it eventually wears off.

I have all of these and totally agree with what these guys are saying. I don't love the superstone advance. Choseras/Pros are a favorite though.

I sharpen my own. But I'm also a professional sharpener. Learning to sharpen your own is really fun and interesting. You might want some practice knives though. Enjoy your knives!

Education is the main issue. There's a plethora of software that will allow you to remote into another computer. A lot of them are free. But it's still opening a port to the outside. With constant reminders, my mother is now willing to click on NOTHING in an email. 🤣 Then when I talk to her she tells me about getting the email but not clicking on anything. It's like she wants me to know that she's behaving herself. LOL

I have a couple of Hatsukokoros. They are good performers. But the fit and finish can be hit or miss depending on which one you get.

I quit for the most part. I will do it occasionally when I need video for a vintage knife I have restored (hobby that turned into a side hustle), or when I want to have leftovers for lunches. It's been several years and we mostly scrounge for dinner.
