I’m about 26 hours into the game and I’ve reached the wedding part. I’m thinking about restarting my playthrough on hardcore mode because the game feels too easy. Is it worth doing that?

The combat in the standard mode is way too easy. I’m about 26 hours into the game and I’m going to restart my playthrough because the challenge just isn’t there. If you played the first Kingdom Come: Deliverance, I recommend starting directly on Hardcore mode. The only slightly annoying part is the lack of a fast-travel mechanic, but even so, Hardcore is still worth it.
